I have been making Dense Bean Salads and I like to meal prep a large batch, about 8 cups. I added garbanzos and lentils for my beans, and cucumber and mushrooms to cut calorie density. The dijon dressing is good enough to eat with a spoon! I will add more low cal veggies next time like carrots and broccolini. Definitely a keeper!

Made it for a party and got a request for including the salad for Christmas dinner. Easy to make bigger by adding more of anything/everything. I just used a store brand (Wegman’s) of Parmesan Italian dressing and everyone loved it. I am adding the Easy Antipasto Skewers to the menu for an appetizer.
